White chicken chili

Spice up your night with this delicious meal

This is my go-to recipe if I am having friends over for dinner. This chili freezes well, so you can cook it for dinner and freeze a portion for another time. Make it as mild or as spicy as you like!

Serves: 4

Prep time: 15-20 min

Cook time: 20 min

Total time: 40 minutes (if cooking on stovetop)

Ingredients:
  • 2 large cooked chicken breasts cut into smaller pieces
  • 1 can of creamed corn
  • 2 4.5-oz cans of diced chili peppers
  • 2 cans of white navy beans (drained)
  • 2 red bell peppers (chopped into small pieces)
  • 1 yellow bell pepper (chopped into small pieces)
  • 1 small onion (chopped into small pieces)
  • 1 diced jalapeno pepper (optional)
  • 1 tablespoon of olive oil
Optional toppings:
  • Shredded cheddar cheese, sour cream, salsa, guacamole, or tortilla strips
Prep/cooking instructions:
  1. Heat stovetop and add olive oil.
  2. Add peppers and onions, and sauté.
  3. Add cooked chicken, navy beans, and creamed corn.
  4. Stir, lower heat, and simmer for about 10 minutes.

Additional tips:

  • Save time and get rotisserie chicken from the deli at the grocery store
  • Replace fresh onion and bell peppers with a bag of frozen fajita onion-and-pepper mix
  • Use a slow-cooker instead of the stovetop
