Get cozy with a delicious bowl of Greek soup

This is a favorite recipe of mine and is very easy to make. It’s a hearty Greek soup, surprisingly flavorful for having such few ingredients. It tastes delicious with crusty bread!

Serves: 4-6

Prep time: 15 min

Cook time: 30 min

Total time: 45 min

Ingredients:
  • 2 cups of whole, peeled tomatoes (preferably roasted)
  • 1½ cups of orzo
  • ⅓ cup of good-quality olive oil
  • 1 cup of white onions, chopped
  • 2 tablespoons of dried, crushed Greek oregano
  • 1 teaspoon of salt/freshly ground pepper
  • 5 cups of water
Prep/cooking instructions:
  1. Sauté onions in olive oil over low heat until soft.
  2. Break up the tomatoes with a fork.
  3. Add tomatoes, oregano, salt, pepper, and orzo. Stir to combine well.
  4. Cook on low heat for 5 minutes.
  5. Add water and cook gently on low heat for approximately 25 minutes. Stir often to make sure your orzo doesn’t stick to the bottom of your pot.

Additional tips:

  • The orzo will absorb liquid over time, so you may need to add a couple tablespoons of water when reheating
