Grilled salmon with spinach & red onions

Try a great low-calorie recipe that is easy and healthy

This is one of my favorite recipes to make for my family. It’s always a crowd-pleaser in my house! Add red potatoes to make it a filling supper.

Total time: 55 min

  • 3 fresh salmon filets
  • 5 medium-sized red potatoes
  • 1 bag of fresh spinach
  • ¾ cup red onion
  • 1 teaspoon salt
  • ⅛ teaspoon black pepper
  • ⅛ teaspoon garlic powder
  • 2 tablespoons extra virgin olive oil
Prep/cooking instructions:
  1. Preheat oven to 350°F.
  2. Remove salmon from packaging. Lightly season both sides of each filet with salt, black pepper, and garlic powder. Set aside.
  3. Rinse potatoes, cut each of them into 8 pieces, and place in a medium-sized bowl. Add oil, salt, pepper, and garlic powder. Toss well and place on a greased sheet pan.
  4. Open bag of spinach, rinse with cold water, and remove any large stems.
  5. Place salmon on lightly greased grill. Cook on each side for 8 minutes or until done.
  6. Place potatoes in the oven, and bake for 30-35 minutes or until tender.
  7. Heat a sauté pan. Add 1 tablespoon of cooking oil to pan. Add red onions and cook until lightly browned. Add spinach and cook down. Once the spinach is slightly wilted, add in a pinch of salt and pepper.

Additional tips:

  • If you don’t have a grill, cook the salmon filets in an oven
  • Consider substituting sweet potatoes for red potatoes
