  • 4 slices whole grain bread
  • 1 ripe avocado, pitted and sliced
  • 1 small tomato, sliced
  • 2 eggs—poached, boiled, or fried
  • Salt and pepper to taste

Prep/cooking instructions:

  1. Toast bread. Top each slice with ¼ of the avocado, and spread until bread is covered.
  2. Top 2 slices bread with tomato and 2 slices with egg.
  3. Season with salt and pepper.
