Put your own healthy spin on this long-time favorite

  • 6 cups toasted rice cereal
  • 2 eggs
  • 1 cup butter
  • 1½ cups brown sugar
  • 2 cups dates
  • 2 tablespoons milk
  • ½ teaspoon salt
  • 1 teaspoon vanilla
  • 2 cups coconut flakes in a bowl
  • 1 cooking sheet or plate lined with wax paper

Prep/cooking instructions:

  1. In a small bowl, beat eggs, then set to the side.
  2. Melt butter over medium heat in a pan. Once butter is melted, add brown sugar and 2 cups dates. Cook slowly until the mixture leaves edges of pan, and stir constantly. Turn heat down slightly and add eggs that were set aside as well as the milk and salt. Cook for about 2 more minutes, then add vanilla.
  3. Pour toasted rice cereal into a large bowl. Remove the mixture from the stove and stir it lightly into the large bowl of rice cereal.
  4. Once the mixture is properly combined with the toasted rice cereal, butter your hands, then roll balls of the cereal mixture about the size of a large marble or a ping-pong ball in the bowl of coconut. Once the treat is covered in coconut, place it on the cookie sheet or plate and refrigerate or serve immediately.

Additional tips:

  • These treats taste really good cold but can be enjoyed at any temperature. Avoid keeping them in a warm temperature though, as the date mixture can melt slightly and appear squishy
  • You can substitute the butter for ½ cup applesauce and ½ cup coconut oil. It will change the taste a bit, but makes it a bit healthier
