Almond energy bites

Little treats with lots of flavor

This is one of my family’s favorite recipes. We’re always short of time, so this is a great on-the-go snack or breakfast. It contains healthy ingredients and is easy to make.

Serves: 3-4

Prep time: 15 min

Cook time: 0 min (1 hr freeze time)

Total time: 1 hr and 15 min

Ingredients:
  • 1 cup of rolled oats
  • 2 tsp of chia seeds
  • ¼ cup of ground flax seeds
  • ⅓ cup of honey
  • 1 cup of crunchy almond butter (or peanut butter)
  • 1 tsp of vanilla extract
  • ¼ cup of mini chocolate chips (optional)
Prep/cooking instructions:
  1. Line a cookie sheet with parchment paper.
  2. Combine oats, chia seeds, ground flax, honey, almond butter, vanilla extract, and chocolate chips.
  3. Mix well and shape into small balls with your hands. Place the energy bites on the parchment paper.
  4. Place the cookie sheet in the freezer. Freeze for 1 hour until set.

Additional tips:

  • Place in an airtight container and store in the refrigerator
  • If the mixture needs almond milk in the morning, just add some more
