Banana oatmeal breakfast cookies

A healthy treat to start the day

My kids and I are not big oatmeal eaters. We rarely ate bananas until I started making this breakfast cookie. Packed with antioxidants, fiber, and potassium, it tastes like banana bread and is so simple you will not believe it!

Serves: 4-8

Prep time: 10 min

Cook time: 20 min

Total time: 30 min

Ingredients:
  • 3 bananas (mashed)
  • 1 teaspoon of cinnamon
  • 1 teaspoon of salt
  • 1 tablespoon of vanilla extract
  • 1½ cups of oats
  • ¼ cup of shredded coconut
  • 1 handful of dark chocolate chips
Prep/cooking instructions:
  1. Preheat oven to 350°F.
  2. Mix ingredients in bowl.
  3. Spoon onto greased pan and cook for 20 minutes.
  4. Cool and enjoy!
