Sweet potato nachos

A not-so-guilty pleasure that’s a sure crowd-pleaser

Sweet potato nachos are loaded with good-for-you ingredients. With all the yummy toppings, you can be sure no one will miss the chips!

Total time: 30 min

Ingredients:
  • 1 large sweet potato, sliced,
    ¼-inch rounds
  • 1 teaspoon chili powder
  • 1 teaspoon canola oil
  • 1 can black beans, drained and rinsed
  • 1 10-oz bag frozen corn
  • ¼ cup cheese, shredded
  • ½ avocado, chopped
Prep/cooking instructions:
  1. Preheat oven to 425°F.
  2. In a large bowl, stir together sweet potatoes with chili powder and oil. Layer potatoes on a large baking sheet. Bake for 18-20 minutes until cooked through. A little browning is OK.
  3. Place the corn in a single layer in an ovenproof skillet. Roast in the oven, stirring once (at the same time you're cooking the potatoes). Cook until some are turning brown (around 18-20 minutes).
  4. When potatoes are done, top with black beans, corn, and cheese. Return to oven and cook until cheese melts. Sprinkle with avocado. Serve.

Additional tips:

  • Add extra flavor with tomato, meat, chicken, or fish
  • Spice it up with cayenne pepper, ground cumin, jalapenos, or green chilis
  • Dress up these nachos by adding cilantro, lime juice, green onion, salsa, or plain Greek-style yogurt or sour cream
