A healthier take on tacos

This salad is a great way to enjoy Taco Tuesday while getting in a hefty dose of veggies.

  • 3 cups chopped romaine
  • 3 ounces ground turkey cooked in taco seasoning
  • ½ cup black beans
  • 1 cup cooked peppers and onions
  • 2 tablespoons low-sodium salsa, divided
  • ¼ of an avocado, sliced
  • 1 tablespoon plain Greek yogurt
  • 1 tablespoon shredded cheese
  • 3 tortilla chips, crumbled

Prep/cooking instructions:

  1. Toss lettuce, turkey, beans, and vegetables in a large bowl with 1 tablespoon of salsa. Transfer to a plate.
  2. Top salad with remaining salsa, avocado, yogurt, cheese, and tortilla chips.

Additional tips:

  • This recipe is easy to customize, so feel free to swap in your favorite taco fillings
  • To serve more people, simply multiply the ingredients by however much you need
