Cajun jambalaya pasta

Ingredients:
  • 15-20 medium-sized fresh shrimp (peeled and deveined)
  • 1 boneless chicken breast
  • 1 medium-sized green pepper
  • 1 medium-sized red pepper
  • ½ of a red onion
  • 2 teaspoons butter
  • 2 teaspoons clam juice
  • 2 teaspoons Cajun seasoning (divided)
  • A pinch of salt
  • A pinch of black pepper
  • 1 teaspoon minced garlic
  • 8 oz uncooked linguine
Prep/cooking instructions:
  1. Boil pasta for 8-10 minutes or until al dente. Strain and set aside.
  2. Slice chicken breast into 1" pieces. Lightly season with salt, pepper, and 1 teaspoon of Cajun seasoning.
  3. Cut green pepper, red pepper, and red onion into thin strips.
  4. Sauté chicken in butter, garlic, and 1 teaspoon of Cajun seasoning. Add the red onion when the chicken is ¾ done. Sauté until onion is light brown.
  5. Lower the heat, add peppers, and cook until peppers are al dente.
  6. Add shrimp. When the shrimp begins to turn pink, add the clam juice, salt, pepper, and pasta. Serve hot.

Additional tips:

  • Control your heat—don’t let the butter burn when you are sautéing the ingredients
  • For more flavor, season chicken overnight
  • Consider substituting whole wheat pasta or zucchini noodles for traditional pasta
